Duringwine making, alcoholic fermentation takes place using the traditionalKakhetianmethod, only ina“Qvevri”togetherwith the total amount of grape,skin and seeds.After finishing the alcoholic fermentation, the winewith all its whole massis left in a“Qvevri” forat least 6 months.Thevineyards are located in the administrative territory of the villageof Bakurtsikhe , Gurjaani municipality, in a favorable place forquality winemaking, on the low exposure of the 3-4° slope of thenortheastern slopes of the Gombori ridge, on the right bank of theAlazani River, at an altitude of 350-750 m above sea level. Theannual total of atmospheric precipitation is 770 mm, during thevegetation period - 585 mm, its duration is 210 days. On the surfaceof the soil, which is humus-carbonate, the average annual temperatureis 15 °C. In July-August, the average temperature of the soilsurface is the highest and reaches 30 °C.
